Ginger Cookies


For any occasion, you can make these simple Ginger Cookies that tastes amazing. I made these for Jessica and she absolutely loved them. They have a crispy sugary exterior and a chewy cakey centre, with a kick of ginger at the end. Enjoy!


2 cups all-purpose flour
2 tablespoons ground ginger
2 teaspoons baking soda
½ teaspoon salt
1 cup granulated sugar
¼ cup brown sugar
½ cup of softened butter
2 tablespoons honey
1 teaspoon vanilla etract
1 large egg

Preheat oven to 350 degrees Farenheit.

Combine flour, salt, baking soda, ground ginger into a bowl. In another bowl, combine 1 cup of granulated sugar with the butter. Once incorporated, add in the brown sugar and mix on medium speed until fluffy. Add the vanilla, and egg, and mix well. Slowly add the flour mixture and beat at a slow speed to fully combined. Cover the dough with plastic wrap and leave it in the frig for up to 5 hours, or the freezer for 30 minutes.

The Sugar Coating
Fill a cup with granulated sugar. Shape the dough into 1 inch balls and coat each ball into the sugar until evenly coated. We do this because we want to get a sugary crust when the cookie bakes.

Place parchment paper on a cookie sheet, and put each cookie dough ball on the paper. Bake at 350 degrees Farenheit for 10-11 minutes until browned.

Cool for 10 minutes on the pan before removing it and storing it in your cookie jar.
