Super Soft Cowgirl Cookies

cookies-8In our last post, we shared tips and tricks on how to achieve super soft, melt in your mouth cookies. Here’s a great recipe that takes everyday ingredients right from your pantry! We tossed in pretzels, chocolate chips, nuts and granola bars to create a sweet and salty combination. The result? Let’s just say nothing but crumbs was left by the end of the day.

Super Soft ‘Cowgirl Cookies
Yields 16-20

  • 1 1/2 cups bread flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/4 cups of unsalted butter, melted
  • 3/4 cup white granulates gguar
  • 3.4 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup of granola (we used Honey n Oats Nature Valley bars and crushed them up)
  • 1/2 cup of salted pretzels
  • 1 cup semi sweet chocolate chips
  • 1/4 cup of chopped almonds (or any nut you prefer)
  1. Combine flour, baking powder, baking soda and salt
  2. In a separate bowl, whisk melted butter and sugar for 2 minutes
  3. Bring together the wet and dry ingredients using a spatula and mix until just combined
  4. Slowly add your pretzels, chocolate chips, granola and chopped nuts
  5. Scoop dough into 1 1/2 diameter balls and chill for 20 minutes
  6. Preheat oven to 375 degrees
  7. Line baking sheet with parchment paper and place scooped dough 2 inches apart on the sheet
  8. Bake for 13-16 minutes and rotating the baking sheet halfway through
  9. Let cool and enjoy! Try not to eat them all at once :)
